Chicken Salad


1 Chicken
2 carrots, grated
2 stalks of celery, minced
1/2 - 1 cup sweet pickle relish
1/2 - 1 cup mayonnaise


Debone a Beer-can Chicken and chop meat very fine. Add remaining ingredients and mix well. Start with only a half cup each of mayo and relish; then add more to taste if needed.
